Eton Mess

Serves 4

Ingredients
450g strawberries, sliced
3 egg whites
6oz caster sugar
600g double cream
Kirsch liqueur (optional indulgence)


Method
1. In a perfectly clean bowl whisk the egg whites until they form soft peaks, then add the sugar a little at a time and continue to whisk as you do so.

2. Pipe the meringue onto a tray lined with parchment paper and put into the oven gas mark 1, (275F,140C) cook for an hour then turn off the oven and leave the meringues in the oven until it is completely cold.

3. Lightly whip the cream then add the strawberries and mix in the roughly broken meringue.

4. To serve place the mixture into glasses, and for grown ups add a little Kirsch liqueur.
